Classic Chocolate Chip Cookies
I have made A LOT of gluten free cookies since being gluten free, and I have loved most of them but these ones taste the most like your classic, wheat-flour chocolate chip cookie. Plus this makes about 3 dozen so that's a plus. Haha! Enjoy.
Ingredients
2 1/2 C GF all purpose flour (my fav so far is Bob's Red Mill 1:1 Baking Flour)
2 C brown sugar (can sub brown sugar)
1/2 C softened butter (equivalent to 1 stick) or ghee if DF
2 eggs
1 tsp baking soda
pinch of salt
2 tsp vanilla extract
2 C chocolate chips
Directions
Cream the softened butter & sugar by beating with a mixer on medium/high for about 2 minutes
Add in the egg & vanilla, beat until smooth
Add the dry ingredients (excluding chocolate chips) and mix until combined
Lastly, fold in the chocolate chips. *If you have the time, I recommend refrigerating the dough for about 20 min... but if not they should still work I've done both ways successfully.
Use a cookie scoop or tablespoon to drop onto a baking sheet lined with parchment paper and bake 9-12 at a time for about 10 minutes at 350 (depending on how crispy you like your cookies). YUM!
