Collagen Cookie Dough Balls
What even is collagen?! It is the main structural protein in our skin/connective tissue and makes up 1/3 of the protein in our bodies. I have been using collagen daily since my diagnosis in August of 2017, for it's gut-healing properties. It breaks down protein and carbs, helps to heal damaged cell walls, decreases inflammation, and infuses cell linings with amino acids! My gut will take 2-3 years to fully heal, so I will take all the help that I can get...haha! With that, I made these wonderful little collagen cookie dough balls but you do not NEED collagen to make them! See deets below.Ingredients:
1/4 C coconut flour or 1/2 C GF oat flour
1/3 C almond flour
1/2 C cashew butter (I have also made PB cookie dough balls by using PB instead... and ohhhhh myyyyy feel free to try that if you do not have cashew butter)
2 T maple syrup
2 scoops collagen peptides (*add 1/4 C almond flour if you do not have collagen)
Splash of vanilla extract
Pinch of sea salt
Dash of cinnamon
All you've gotta do is mix everything well and then use a mini cookie scoop to measure the dough out into balls, roll them, refrigerate, and voila! :) You can add milk if it's too dry to roll, or more flour if it's too wet! Enjoy!
