S'more Bars

So, if you know me, you know that s'mores are actually my most favorite thing. Ever. It is one of the things that I have missed most since being diagnosed with Celiac disease, and it's proven nearly impossible to find GF graham crackers that level up to Nabisco Honey Maid grahams; mostly the texture is what bothers me. SO I made S'MORE BARS that include all of the classic flavors but hide the GF graham texture by making it into a crust. Perfect summer dessert!You'll Need:

  • 9 GF graham cracker sheets

  • almost 1 bag of marshmallows

  • 1 bag of chocolate chips (my fav are Enjoy Life dark)

  • 5-6 T of ghee, butter, or coconut oil

Directions:

  1. Place the graham crackers in a sealed gallon sized ziplock bag and crush the crackers using a rolling pin; set 2 T aside (for topping)

  2. Mix the crumbs with the melted butter/ghee/coconut oil and press the mixture into the bottom of a parchment lined loaf pan (I used a 9 x 5"), I used the bottom of a glass to really pack it in tightly!

  3. Lay marshmallows on top of the crust (I used about 3/4 of the bag, also mini marshmallows would probably work just fine if that's what you have!) and bake at 350 for 10-12 minutes

  4. Let begin cooling while you melt the chocolate (I melted mine in the microwave stirring every 30 seconds until smooth) and when melted, pour/spread over the marshmallows until completely covered. Sprinkle the graham crumbs that you set aside earlier and transfer to the fridge until set :) I put mine in overnight before cutting into it!
