Skinny Banana Bread
This recipe can be used if you want a lightened version of classic banana bread :-) Like 80 calories-per-slice-lightened-up... haha. Made in a blender or food processor and very easy and chewy and delish! My fav is warmed up with butter or PB 😍😊 Directions below.
Blend...
2-3 ripe or overripe bananas (it'll be sweeter and more banana-y with 3 but 2 works, I tried)
2 C GF rolled oats (or regular if you're not GF)
1/4 C pure maple syrup (you could probably use honey instead, if needed!)
2 eggs
1 tsp baking soda
2 tsp vanilla extract
Literally just blend it all! I had to stir mine/scrape down the sides in the blender a couple times with a rubber spatula to make sure it blended thoroughly; the oats will become blended into the mixture and not be rolled oats anymore (the ground up oats give it a chewy texture which I really enjoyed). Once mixed well, transfer to a greased loaf pan and bake at 350 ° F for 25-30 minutes.You can also sub the oats for 1 C brown rice flour and that way skip the blender :)Feel free to add chocolate chips, cinnamon, nuts, or whatever else you enjoy before baking!xo, Celiac Sweetie
