PB Oatmeal Chocolate Chip Cookies

FLOURLESS • DAIRY-FREE • REFINED SUGAR-FREE • OIL FREE 

You only need 1 bowl and 7 ingredients :-) Came up with this recipe for my grandma. I am going to MA to visit her and the peanut butter/chocolate combo is her fav. They turned out wonderfully; slightly crispy on the outside and sooo soft and chewy inside... I will definitely be making these again! The real challenge is going to be not eating them all before I reach Massachusetts, ha

.Recipe below:

  • 1 C all natural creamy PB

  • 3/4 C coconut palm sugar (brown sugar would also work but they would no longer be refined sugar-free)

  • 1/2 C gluten free rolled oats

  • 1 egg

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 - 3/4 C chocolate chips (I used Enjoy Life dark chocolate, make sure to get these or other ones that are dairy-free if you are baking them for someone who eats dairy-free, as many chocolate chips have dairy!)

  1. Preheat oven to 350 ° F and line a baking sheet with parchment paper

  2. Mix PB, egg, sugar, and vanilla until smooth (I just used a big fork)

  3. Stir in the oats and baking soda

  4. Fold in chocolate chips

  5. Use a cookie scoop or roll into balls and place on baking sheet. Flatten them gently, just slightly using your palm or a rubber spatula (see photo)

  6. Bake for 9-10 min. Be careful when removing them from the baking sheet, they fall apart pretty easily before they are cooled! I let them sit for a minute or two and then gently transferred them to the cooling rack using a wide spatula.
