Taco Chicken Salad
This is not a super specific recipe , but maybe it can give you a yummy dinner idea that you can personalize to your taste :) I do not have specific measurements, but I will list what I put into this deliciousness and how I prepared it!
I used...
Mixed greens
Chicken breasts (preparation will be included below)
Homemade taco seasoning (see photo down below of what went into that)
Drained and rinsed black beans
Diced yellow onion
Diced bell peppers
Shredded sweet potato
Jalepeño sunflower seeds (I think I found these at whole foods)
Plain greek yogurt
Here is what I did:
First I placed the chicken breasts into a crock pot (nothing else in it) and shredded that after it was fully cooked
Then I added a little broth (probably 2-4 tablespoons, you could totally use water) and an unknown amount of homemade taco seasoning (I will guess 3 tablespoons?) and turned the crockpot to low for another hour or so
I sautéed the sweet potato shreds in a pan with olive oil and pepper, and then I assembled my taco salad plate!
I started with a bed of greens and then just added the rest and ended with a dollop of plain greek yogurt in place of sour cream. While I waited for my meal to be ready I snacked on chips and homemade guacamole.
