Cheesecake Stuffed Chocolate Strawberries

Ingredients
10 large strawberries
8 oz plain cream cheese, softened *sub vegan cream cheese for vegan/DF option
1 T sour cream or plain green yogurt (can omit for vegan option)
3/4 C powdered sugar
2 tsp vanilla extract or vanilla bean paste (this is why you might see vanilla bean specks in my photos)
2 C dark chocolate *make sure they’re DF if you are making them DF
1 tsp coconut oil
Optional: 1/2 C white chocolate chips and 1/4 tsp coconut oil for drizzle
Directions:
Cut the tops off of the strawberries and scoop out the insides– I used the small end of a melon baller to remove the inside of my strawberries (see photo below)
Make the cream cheese filling by first making sure your cream cheese is softened– I microwaved mine in a glass bowl for 30 seconds to make sure I avoided clumps when mixing.
Add your sour cream or Greek yogurt, vanilla extract/vanilla bean paste, and powdered sugar and mixes thoroughly by hand or with a hand mixer
Transfer mixture to a ziplock bag and cut a hole on one corner to pipe filling into the strawberries, refrigerate when filled (optional to dip the tops in crushed GF graham crackers)
Melt dark chocolate with 1 tsp coconut oil in a microwave safe bowl in 30 second increments, stirring between, until you have smooth melted chocolate
Take strawberries from the refrigerator and carefully dip each one into chocolate and place on wax paper and into the fridge to set
Melt white chocolate and 1/4 tsp coconut oil and put in a ziplock and cut a very small hole in the corner to drizzle over the strawberries once the dark chocolate has set
Best enjoyed the same day. Store in refrigerator
