Banana Chia Chocolate Chip Muffins
Grain-free, DF, vegan, refined sugar free. So clean and delicious! Makes about 8 muffins.Ingredients:
- 2 overripe bananas, mashed
- 1/2 C banana flour (can sub GF oat flour)
- 1/4 C chia seeds (black or white work the same, I used white in these photos)
- 1/4 C pure maple syrup (can sub honey)
- 1/2 tsp baking soda
- Pinch of salt
- 1/2 C chocolate chips of your choice
- 1/2 T of lemon or lime juice
Directions:
- Use a food processor or hand mixer to first mix chia seeds, maple syrup, and mashed bananas
- Once well combined, add in the remaining ingredients except for the chocolate chips
- Fold in chocolate chips and scoop batter into a muffin tin lined with non-stick baking cups or sprayed with non-stick cooking spray, filling about 2/3 of the way full
- Bake at 375º F for 15-20 minutes, until they are set in the middle
