Banana Chia Chocolate Chip Muffins

Grain-free, DF, vegan, refined sugar free. So clean and delicious! Makes about 8 muffins.Ingredients:

  • 2 overripe bananas, mashed
  • 1/2 C banana flour (can sub GF oat flour)
  • 1/4 C chia seeds (black or white work the same, I used white in these photos)
  • 1/4 C pure maple syrup (can sub honey)
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/2 C chocolate chips of your choice
  • 1/2 T of lemon or lime juice

Directions:

  1. Use a food processor or hand mixer to first mix chia seeds, maple syrup, and mashed bananas
  2. Once well combined, add in the remaining ingredients except for the chocolate chips
  3. Fold in chocolate chips and scoop batter into a muffin tin lined with non-stick baking cups or sprayed with non-stick cooking spray, filling about 2/3 of the way full
  4. Bake at 375º F for 15-20 minutes, until they are set in the middle
