Sweet Maple Pumpkin Tacos

Looking for a breakfast idea that is not eggs? I've got you covered! These are too easy and healthier than they look. ;-) GF and vegetarian.e6bfbe93-6c85-40ec-9150-7c0ea18a8c54.jpgPrintable recipe below.[recipe title="Sweet Maple Pumpkin Tacos" difficulty="easy" servings="3 tacos"]Ingredients:

  • Pumpkin spice pancake mix (I used Birchbender's paleo mix, but you could use your favorite GF pancake recipe and add 1/2-1 tsp pumpkin pie spice as a sub)
  • 1 C Greek yogurt (can sub DF yogurt)
  • 1 T maple butter (can sub 2 T maple syrup)
  • 1/2 tsp pumpkin pie spice
  • Any toppings you'd like :-) I did chocolate chips, chopped walnuts, honey, almond butter, bananas

Directions:

  1. Prepare 3 pancakes as directed on package, about 6" in diameter
  2. Set aside and let cool
  3. Add yogurt, maple butter, and pumpkin pie spice to a bowl and mix until well combined
  4. Once pancakes have cooled enough, spoon yogurt mixture into each pancake "taco"
  5. Top with whatever your tummy desires!
