Burrata & Roasted Tomatoes on GF Crostini
This is SO good and is the perfect appetizer to serve at your gatherings!
You’ll need
2 pints of red grape tomatoes
3 T olive oil, divided
5 tsp minced garlic, divided
S&P to taste
6 fresh basil leaves, sliced or chopped
2 of your fav GF baguettes (I used Against the Grain rosemary, I find it in the freezer section!)
16 oz burrata
Balsamic glaze
Halve or quarter your tomatoes (whichever your preference, both work!)
Add to an oven safe dish and add in 2 T EVOO, 3 tsp minced garlic, S&P to taste
Roast tomatoes uncovered at 400 F for 20 min or until tomatoes/juices are bubbling and soft
Slice baguettes into 1/4” slices, spread on a baking sheet and spray (or brush) each slice with a little oil
Roast at 425 F for 8 min (or whatever the baguette instructions say if you use a diff one than I used)
Mix 2 tsp minced garlic with 1 T EVOO and brush it on each crostini after done toasting
Assemble! Add burrata, a spoonful of roasted tomatoes, top with fresh basil and a drizzle of balsamic glaze
Serve and enjoy!
