Dill Pickle Pasta Salad
This is for my fellow pickle lovers out there!
Ingredients:
2 C chopped pickles
8 oz GF pasta, cooked Al dente
1 C colby cheddar, cubed
2 T fresh dill
1/4 C finely diced red onion
Dressing:
¼ C mayo
½ C Greek yogurt
1 T dried dill
3 T pickle juice
1 tsp white vinegar
½ tsp onion powder
½ tsp black pepper
½ tsp salt
sprinkle of cayenne (optional)
Directions:
Combine all of the pasta ingredients in a large bowl
Whisk together all dressing ingredients
Add dressing just prior to serving. If you won’t be serving right away, I recommend waiting to add the dressing so the noodles don’t soak it up!
Serve with extra fresh dill, pairs well with some grilled chicken or burgers
*optional to add some chopped pickled jalapeños if you are into spice
