Dill Pickle Pasta Salad

This is for my fellow pickle lovers out there!

Ingredients: 

  • 2 C chopped pickles

  • 8 oz GF pasta, cooked Al dente

  • 1 C colby cheddar, cubed

  • 2 T fresh dill

  • 1/4 C finely diced red onion

Dressing:

  • ¼ C mayo

  • ½ C Greek yogurt

  • 1 T dried dill

  • 3 T pickle juice

  • 1 tsp white vinegar

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt

  • sprinkle of cayenne (optional)


Directions:

  1. Combine all of the pasta ingredients in a large bowl

  2. Whisk together all dressing ingredients

  3. Add dressing just prior to serving. If you won’t be serving right away, I recommend waiting to add the dressing so the noodles don’t soak it up! 

  4. Serve with extra fresh dill, pairs well with some grilled chicken or burgers


*optional to add some chopped pickled jalapeños if you are into spice
