GF DF Trader Joe’s Breakfast

This breakfast keeps me full for hours and is gluten AND dairy-free! You can find all of these ingredients at Trader Joe’s. 😊



TJ products to add to your grocery list for this meal:

- 1 package of hash brown patties (frozen)

- 1 avocado

- 1 jar of sweet n spicy pickled jalapeños 

- 1 lime

- 1 red onion

- Carton of eggs

- 1 jar of chili onion crunch

- 1 bottle of spicy honey 

- 1 container of vegan butter


Directions for 2 servings:

  1. Cook 4 hashbrowns first- I recommend air fryer or baking on a parchment lined pan at 400 F for 14 min, then broiling on high for 2 min to crisp them up

  2. While the hashbrowns are cooking, make your avo mash. Mash 1 ripe avocado with 2 T diced red onion, 1 tsp lime juice, 2 T chopped pickled jalapeños, S&P to taste

  3. When your hashbrowns are close to being done cooking, cook 4 sunny side up eggs. Heat 3 T butter in a large pan over medium heat until it’s melted and hot. Then crack eggs in the pan, only starting with the whites so that you don’t get that center layer of egg whites in the middle that cook slower than the rest so you can achieve the runny yolk and cooked egg whites

  4. Assemble: hash brown, avocado mash, egg, chili onion crunch, spicy honey
