Have you tried the original Marry Me Chicken? The idea is that the chicken is so unbelievably good, it could cause a person to propose to the cook right there on the spot. Different versions have been floating around the internet for some time now. I decided to make a GF pasta version of this famous saucey dish! It is SO good!

Ingredients

  • 16 oz cooked gluten-free spaghetti
  • 2 T avocado oil
  • 1 1/2 C sun-dried tomatoes
  • 1 T Italian seasoning
  • 2 T gluten-free flour
  • 2 C chicken broth
  • 1/2 C heavy cream
  • 1 C fresh shredded Parmesan
  • 2 C roughly chopped spinach
  • S&P to taste

Instructions

  1. Add oil to a large dutch oven over medium heat
  2. Stir in garlic, sun-dried tomatoes, seasoning, and S&P and sauté for 3-4 minutes
  3. Stir in flour and stir and cook for another 6 minutes
  4. Add chicken broth, be sure to scrape any bits from the bottom of the pan
  5. Bring mixture to a boil and let mixture thicken for about 10 minutes
  6. Once sauce has thickened, add in pasta and remove from heat
  7. Stir in cream, spinach, and cheese
  8. Serve with an extra sprinkle of parmesan
