Cowboy Caviar
This is simple and accommodates GF, DF, and V diets. It never lasts long! This is a crowd pleasing appetizer or snack to bring on the boat for your next summer lake day. Enjoy!

Ingredients
Cowboy Caviar
- 1 can black beans drained/rinsed
- 1 15oz can yellow corn kernels drained/rinsed
- 1 15 oz can black eyed peas drained/rinsed
- 2 Roma tomatoes deseeded and chopped
- ½ C chopped green/red bell peppers
- 1 jalapeño deseeded and diced
- ¼ C red onion finely diced
- ½ C chopped cilantro
Dressing
- ¼ C white wine vinegar
- ¼ C avo oil
- Juice of 1 lime
- 2-3 T coconut sugar (can sub regular sugar)
- ¼ tsp garlic powder
- S&P to taste
- Dash of cayenne (optional)
Instructions
- Combine all the ingredients for the cowboy caviar
- Whisk together the dressing,
- Toss the cowboy caviar in the dressing, and let flavors meld in the fridge until you are ready to serve
- Serve with tortilla chips
