This fresh and delicious dip is everything you never knew you needed if you are partial to the classic Greek inspired ingredients. Think of a taco layer dip, but change the flavor profile to Greek! So good, fresh, and easy.

Ingredients

Vegetable Layer
  • 3 roma tomatoes, deseeded and dices; let sit on paper towels to absorb excess moisture
  • 1 whole cucumber, deseeded and diced (about 2 C)
  • 1/4 C finely diced red onion
  • 1/4 C roughly chopped pitted kalamata olives
  • 1/2 T minced garlic
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 C fresh parsley, chopped (reserve 2 T for garnish)
  • 1 T lemon juice
Avocado Layer
  • 2 ripe avocados
  • 1 T lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
Other Layers
  • 2 C Greek yogurt (*sub sour cream)
  • 10 oz hummus (I did store bought, you could certainly make your own)
  • 4 oz crumbled feta cheese

Instructions

Assemble
  1. Mix all of the ingredients in the vegetable layer, set aside
  2. Mix all of the ingredients of the avocado layer, set aside
  3. Spread layer of hummus on the bottom of a 7x11 (or similar) dish
  4. Spread avocado layer over hummus
  5. Scatter HALF of the vegetable mixture on top of the avocado layer and try to spread evenly without disturbing the avocado mix
  6. Add dollops of Greek yogurt evenly over the vegetable layer and very carefully spread until you have the vegetable layer covered (this is the trickiest part of the whole recipe to spread it over the "loose" vegetables)
  7. Add the second half of the vegetable layer
  8. Sprinkle feta over the top
  9. Garnished with reserved parsley
  10. Serve with GF pita chips or crackers
